Our grove climbs eleven dry-stone terraces on the eastern slope of Monte Subasio, at 480 metres. Some of the trunks were already old when the terraces were rebuilt in 1790.
We pick by hand in the last days of October, while the olives are still green and turning. The yield is small. The flavour is not.
Green, bitter, peppery. As it should be.

Each allocation is set aside by hand and numbered. 500 ml, 38 euro a bottle, up to six per household. Shipped from the mill across the European Union.
